Pitha are rice-based cakes or dumplings eaten across Assam, especially during Bihu. They come in many forms—steamed, fried, stuffed or unfilled—and use freshly ground rice or specially grown bora saul (sticky aromatic rice). Popular fillings include jaggery and grated coconut, sesame, or sweetened lentils. The textures can range from chewy to pillowy depending on the rice and technique.
