Erissery is a rich, comforting curry that combines pumpkin (or coconuty squash) with roasted coconut and legumes like black-eyed peas. The roasted coconut gives a nutty base that deepens the pumpkin's natural sweetness. In Kerala, erissery is a must because it adds body and a sense of fullness to the sadya.
