Sweet potatoes are nutrient-dense and become very tender when baked, boiled, or steamed, which makes them easier to digest than raw or heavily spiced tubers. They provide beta-carotene and complex carbohydrates without the harshness of raw vegetables. Mash or puree boiled sweet potato with a touch of ghee for extra calories and palatability when appetite is low.
